Pizza
- serves 2
- 2 h 30 min
- level: okay
You need
- 300 g strong bread flour
- 1 teaspoon fast-action yeast, 1 teaspoon salt, 1 teaspoon sugar
- 200 ml warm water (like a bath, not hot)
- 1 tablespoon olive oil
- 5 tablespoons passata, with a pinch of salt
- mozzarella, basil, whatever toppings
Do this
- Mix flour, yeast, salt and sugar. Add water and oil. Stir, then knead 8 minutes until smooth and bouncy.
- Cover and leave somewhere warm for 1 hour, until about double.
- Heat the oven as hot as it goes 240 °C or more with a tray inside.
- Stretch the dough with your fingers on a floured surface. Do not use a rolling pin: it squashes the bubbles.
- Sauce, cheese, toppings. Less than you think.
- Slide onto the hot tray. Bake 8 to 10 minutes, until the edge is spotty brown.
Note to self: The dough rises on its own schedule and no, you cannot speed it up. Wet dough sticks to everything, so flour your hands, not the dough. Too much topping makes a soggy middle.
