Salmon sushi
- serves 2
- 1 h 15 min
- level: tricky
You need
- 1 cup sushi rice, 1 cup water
- 2 tablespoons rice vinegar, 1 tablespoon sugar, 1/2 teaspoon salt
- 200 g sushi-grade salmon (say it is for raw eating when you buy it)
- soy sauce, wasabi, pickled ginger
- nori sheets if you want rolls
Do this
- Rinse the rice until the water is almost clear. Cook it with the water, then rest 10 minutes covered.
- Warm the vinegar, sugar and salt until dissolved. Fold into the rice with a cutting motion. Fan it to cool.
- Wet your hands. Shape a small oval of rice, about a spoonful.
- Slice the salmon across the grain, in thin slices, with one long pull of the knife.
- Dab a little wasabi on the rice, lay the salmon on top, press gently.
Note to self: Wet hands or the rice sticks to everything. No “works on my machine” here. Use only really fresh fish, from a place that sells it for sushi. When in doubt, make rolls with cooked salmon instead.
